In raw foods, high levels of bacteria may be present. It is important that food is cooked thoroughly to a core temperature of at least 75ºC (82ºC in Scotland) for at least two minutes to kill the bacteria
It is highly advisable that you keep a record of checks that you make to provide you with essential due diligence should the worst happen.
Company Configuration
Company settings on Hopsy allow the company to specify how many items and which items are probed each day. If you are responsible for configuring Hopsy in your company, we recommend that you set up some 'Food Cooking' Tasks in your settings to remind your venues to complete these.
Completing Food Cooking Tasks
Your Cooking tasks will appear in the 'Today's Tasks' list at your venue home.
To complete the check, click the task.
Company settings allow a specific item to require probing OR the probing of 'Any Item' can instead be configured.
If a specific item is required to be probed, this will be stated in the task name.
If the task states 'Probe Any Item', you are able to state which item you have probed at the time of cooking.
If your company has specified that tasks must be completed by a certain time, the time due will be displayed next to the task.
Probe 'Any Item' Tasks
With 'Any Item' tasks, it is important that you capture the temperature of a cooked item, but you can choose which item to probe.

Hopsy will highlight any temperatures outside the legally acceptable range.
Any temperatures outside the acceptable range will require a corrective action to be detailed before the record can be submitted.
Usually, for temperatures that are too low, further cooking will be required.
Probe 'Specific' Item Tasks
When your company has stipulated that a specific item should be probed, then you should ensure that the temperature is recorded for this product only. Unlike the 'Any Item' tasks, you cannot enter the item name at the point of cooking.
If you do wish to capture a food cooking temperature and there are no 'task' for this item, you can use the 'Ad-Hoc' function. See below for instructions.

How do I view historical cooking and reheating temperature records?
Head to your 'Cooking' dashboard under the 'Kitchen' dropdown to view or analyse submitted temperature records:
The 'Today' tab shows the cooking 'sessions' for today. Time thresholds for each session are shown here, along with any cooking records submitted today and any tasks missed.
You can view records from any desired date range in the 'All Records' tab.
Capturing Ad Hoc Records Outside of Tasks
At your 'Food Cookings' page under the 'Kitchen' dropdown, you can choose to capture temperature records independent of any food cooking tasks using the add record button pictured below.
Please note: You are still required to complete any tasks in addition.
